A Quick, Flavorful Chicken Recipe with Fresh Salad on the Side
Sometimes the best meals are also the simplest. This chicken recipe is packed with flavor from a blend of everyday seasonings and comes together in under 15 minutes. Paired with a fresh arugula and cherry tomato salad, it makes the perfect balanced meal for lunch or dinner.
Ingredients
For the Chicken:
2 thin sliced chicken breasts
1 tsp onion powder
1 tsp thyme leaves
1 tsp oregano
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp black pepper
1 tsp salt
For the Salad:
2 cups arugula
1/2 cup cherry tomatoes, halved
1 tbsp olive oil
Salt and pepper to taste
2 tbsp shredded parmesan cheese
Serves: 2
Instructions
Prepare the Chicken:
Pat the chicken breasts dry with a paper towel.
In a small bowl, mix together the onion powder, thyme, oregano, paprika, garlic powder, pepper, and salt.Massage the seasoning blend into both sides of the chicken breasts.
Cook the Chicken:
Heat a stainless steel pan over medium heat.
Add a tablespoon of avocado oil (I used Chosen Foods)
Place the chicken breasts in the pan and cook for 5 minutes on each side, or until golden brown and cooked through.
Make the Salad:
In a bowl, toss the arugula with olive oil, salt, and pepper.
Add the cherry tomatoes and parmesan cheese. Mix gently.
Serve: Slice the chicken and plate it alongside the arugula salad for a fresh, simple, and satisfying meal.
