Crispy Skin Branzino with a Fresh Cilantro Tomato Sauce

If you're looking for a light, flavorful dinner that feels restaurant-quality but takes just 10 minutes, this baked branzino is the one. With a juicy tomato garlic sauce and a crisp skin finish, it's the perfect weeknight recipe that looks as good as it tastes. I love making this when I want something nourishing, fresh, and low-maintenance—plus it’s packed with clean protein and healthy fats.

Ingredients

  • 1 whole fresh branzino, cleaned and butterflied

  • Salt

  • Avocado oil (for searing)

  • Radish slices and cilantro (for garnish)

  • Optional: lime wedge for serving

For the Sauce:

  • 1 cup cherry tomatoes

  • 3 garlic cloves

  • A handful of fresh cilantro, chopped

  • Spicy pepper taste (optional)

  • 1 tablespoon Kiani Extra Virgin Olive Oil

Serves: 2

Instructions


  1. Make the sauce: In a Magic Bullet Blender, combine a cup of cherry tomatoes, 3 garlic cloves, handful of cilantro, and a table spoon of Kiani Olive Oil. Set aside.

  2. Prep the branzino: Pat the fish dry with a paper towel. Lightly salt both sides. Take a spoonful of the sauce and gently spread it over the flesh side of the branzino, leaving the skin untouched so it crisps up nicely during cooking.

  3. Sear the skin: In a Caraway (or oven-safe) pan, heat a small amount of avocado oil over medium-high heat. Once hot, place the fish skin-side down and sear for about 2 minutes.

  4. Bake to finish: Transfer the pan directly to the oven and broil on the medium rack at 500°F for 5 minutes.

  5. Serve: Remove the fish from the oven and carefully transfer to a plate. Spoon more of the sauce over the top and garnish with radish slices and fresh cilantro. I love adding a squeeze of lime for brightness, but it's totally optional.

This quick and vibrant branzino recipe is everything I love in a dinner. It's fresh, nourishing, and packed with flavor. It pairs perfectly with a simple green salad or roasted veggies for a complete meal. Try it the next time you're craving something light yet satisfying.
