During the holidays, I love having a few simple recipes I can rely on whether I am heading to class, making a quick lunch, or adding something refreshing to a cozy dinner at home.
This Holiday Arugula Pear Pomegranate Salad has become a staple. It is bright, crisp, and just sweet enough to make you forget it only took five minutes to put together.
The combination of juicy pomegranate seeds, thinly sliced pears, chopped walnuts, and creamy goat cheese feels so seasonal. It looks beautiful on any table and adds the perfect pop of color next to all the warm holiday dishes. The mint keeps it fresh, and the balsamic glaze on top makes every bite taste special.
Holiday Arugula Pear Pomegranate Salad
(2-3 servings)
2 large handfuls arugula
Fresh mint leaves, chopped
Thinly sliced pears
Chopped walnuts
Goat cheese, crumbled
Balsamic vinaigrette
Balsamic glaze (for finishing)
Hot Chocolate Instructions:
Assemble the greens- Add the arugula and chopped mint to a serving bowl.
Layer the fruit and crunch- Add the thin pear slices and sprinkle pomegranate seeds over the top.
Add the toppings- Finish with chopped walnuts and crumbled goat cheese.
Dress the salad- Drizzle lightly with balsamic vinaigrette.
Finish with glaze- Add a swirl of balsamic glaze for sweetness and shine.
