Despite how bold and layered it tastes, Kashke Bademjan is surprisingly simple to prepare. It’s traditionally served warm with fresh Barbari bread and is perfect as an appetizer, side dish, or even a light meal when paired with herbs and bread.


If you prefer a plant-based version, this dish can easily be adapted by omitting the kashk at the end while still keeping all of its comforting flavors intact.


What Is Kashke Bademjan?

It’s commonly served as an appetizer at Persian meals and restaurants and is loved for its creamy texture, savory depth, and comforting flavor profile.


What Is Kashk?

Kashk is a traditional fermented dairy product commonly used in Persian cooking. It is made from yogurt that has been fermented and reduced, and it can be found in either liquid or dried form. When diluted with hot water and stirred, it becomes smooth and creamy in texture.


This ingredient is widely used in Persian and Middle Eastern dishes for its distinctive savory flavor. Kashk adds a subtle tang and richness that enhances eggplant-based dishes, soups, and stews.


Kashk is typically available at Persian or Middle Eastern grocery stores. If it’s not accessible, many home cooks substitute it with plain yogurt or sour cream, which still provides a creamy and satisfying result.


Kashke Bademjan Ingredients

  • 1 large eggplant

  • Avocado oil, for frying

  • 1 medium onion, thinly sliced

  • 2 cloves garlic, minced

  • 1 teaspoon turmeric

  • 1 teaspoon dried mint

  • Salt and black pepper, to taste

  • ½ cup water

  • Kashk, for topping

  • 2 tablespoons olive oil

  • 1 teaspoon dried mint

  • ½ teaspoon turmeric


Instructions


1. Prepare the Eggplant - Slice the eggplant in half lengthwise and peel the skin. Cut into slices slightly under ½ inch thick for even cooking.


2. Sear the Eggplant- Heat avocado oil in a large skillet over medium heat. Once the oil is hot, add the eggplant slices in a single layer. Cook for about 5 minutes per side, until golden and softened. Remove the eggplant from the pan and place on paper towels to absorb excess oil.


3. Sauté the Aromatics- In the same pan, add the chopped onion and garlic. Sauté over medium heat until softened and lightly golden. Stir in turmeric, dried mint, salt, and black pepper, allowing the spices to bloom for about 30 seconds.


4. Simmer- Return the cooked eggplant to the pan and add about ½ cup of water. Cover with a lid and let everything simmer gently for 25–30 minutes, until the eggplant is very tender and the flavors have melded together.


5. Mash- Remove the lid and mash the mixture to your desired texture. Some prefer it smooth, while others like it slightly chunky.


6. Add Kashk- Drizzle kashk over the mashed eggplant and gently stir or leave it swirled on top, depending on preference.


Mint Oil Topping

  • In a small pan, heat olive oil over low heat.

  • Add dried mint and turmeric and sautĂ© briefly, just until fragrant.

  • Remove from heat immediately to prevent burning.Drizzle over the finished dish before serving.
