Kalam Polo is one of those Persian dishes that proves simple ingredients can create so much flavor. Fragrant basmati rice is layered with tender cabbage, onions, fresh herbs, saffron, and warm spices, then slowly steamed until everything comes together beautifully.


The cabbage becomes soft and savory as it cooks, while the bottom of the rice turns into that irresistible crispy tahdig. It’s comforting, flavorful, and one of those dishes that always feels like a true home-cooked Persian meal.


Kalam Polo Ingredients


  • 2 cups Basmati rice

  • 3 quarts water

  • 3 cups of chopped cabbage

  • 2 cups of chopped white onion

  • 1 cup chopped cilantro

  • 1 cup chopped dill

  • 3 tabslesppon saffron water

  • 2 tablesppon avocado oil

  • 1 tsp Salt

  • 1 stp black pepper

  • 1 tsp tumeric

  • 3 tbsp butter

Kalam Polo Instructions


  1. Prepare the parboil rice

    Rinse the rice several times until the water runs mostly clear. Bring a large pot of water and kosher salt to a boil. Add the rice and cook for exactly 7 minutes, stirring occasionally. Drain the rice and set aside.


  2. Prepare the vegetables and herbs.

    Wash and cut the cabbage and onion into bite-sized pieces. Finely chop the cilantro and dill. You can also add additional fresh herbs if you prefer.


  3. Cook the cabbage mixture.

    Heat a drizzle of avocado oil in a large skillet over medium heat. Add the chopped onion and cabbage and cook for about 3 minutes.


    Season with salt, black pepper, and turmeric, then add the chopped herbs. Continue cooking for another 7 minutes, stirring occasionally, until the cabbage has softened and everything is well combined.


  4. Layer the rice and cabbage.

    Using the same pot the rice was cooked in, add a drizzle of avocado oil and 2 tablespoons of saffron water to the bottom.


    Add a layer of the parboiled rice, followed by a spoonful of the cabbage mixture. Continue alternating layers of rice and cabbage until everything has been used.


    Drizzle the remaining 1 tablespoon of saffron water over the top.


    Using the end of a wooden spoon, make three shallow holes in the rice. Place about 1 teaspoon of butter into each hole.


    Cover the pot with a clean paper towel or kitchen towel, then place the lid tightly on top. Cook over low heat for 45 minutes to 1 hour.


  5. Flip the rice.

    Once the rice is finished cooking, remove the pot from the heat. Place a large serving plate over the top of the pot and carefully flip it over to reveal the crispy golden tahdig.


  6. Serve & Enjoy.

    Kalam Polo can be enjoyed on its own as a vegetarian dish, or served with meatballs, chicken, or your favorite protein for a more filling meal.
