Stuffed Bell Pepper Instructions

  1. Cook the ground beef.

Heat a drizzle of avocado oil in a stainless steel pan over medium heat. Add the ground beef and season with salt and black pepper.

Cook for approximately 6 minutes, breaking apart the meat as it cooks, until browned and fully cooked through.

  2. Add the tomato paste.

Add 1 tablespoon of tomato paste and 3 tablespoons of water to the cooked ground beef.

Stir everything together until the meat is evenly coated in the tomato mixture. Allow it to cook together briefly, then remove from the heat and set aside.

  3. Prepare the bell peppers.

Wash and cut the 4 bell peppers in half, removing the seeds and inner membranes.

I personally love using red bell peppers for their slightly sweet flavor, but feel free to use any color you like!

  4. Bake the bell peppers.

    Preheat your oven to 350°F.

Line a baking tray with parchment paper and arrange the bell peppers evenly across the tray. Drizzle with avocado oil, making sure the peppers are evenly coated.

Place them in the oven and bake for 10 minutes to allow the peppers to begin softening before adding the filling.

  5. Stuff the bell peppers.

Carefully remove the bell peppers from the oven.

Spoon the cooked ground beef mixture evenly into each pepper, filling them generously. Top each stuffed bell pepper with shredded cheese.

  6. Bake until the cheese melts.

Return the stuffed bell peppers to the oven and bake for another 10 minutes, or until the cheese is melted and the peppers are tender.

  7. Serve & Enjoy.

Remove the stuffed bell peppers from the oven and allow them to cool slightly.

Serve over a bed of warm rice or alongside your favorite side dish for a simple, delicious, and protein-packed dinner!
