Lentil and Rice Tahdig

A simple, nourishing two-ingredient dish that’s perfect for busy weeknights or after-school meals.

This lentil and rice tahdig is one of my favorite quick dishes to make when time is short but I still want something warm, filling, and full of texture. It’s just two main ingredients: rice and lentils cooked together to form a golden, crispy layer on the bottom that’s pure comfort.


With minimal prep and simple steps, this dish is ready in about 30 minutes from start to finish. It’s a great base to serve with your favorite protein or enjoy on its own as a satisfying meal.


Ingredients (Serves 2–3):


  • 1 cup rice

  • 1 cup lentils

  • Splash of avocado oil

  • 1 Tbsp Butter

  • Water (for boiling)

  • Salt to taste


Instructions:


  1. Rinse and combine: Rinse the rice and lentils thoroughly, then add them to a medium pot with enough water to cover by a few inches.

  2. Boil: Bring to a boil over high heat. Once most of the water has evaporated from the top, lower the heat to medium-low and throw in a slice of butter.

  3. Add paper and cover: Cover the pot with a paper towel and lid to trap the steam.

  4. Cook low and slow: Continue cooking on low for 20–30 minutes until the bottom turns golden and crispy.

  5. Flip and serve: Carefully remove the pot from the heat, flip it onto a plate, and reveal your beautiful lentil and rice tahdig. Serve warm.

With only two ingredients and a handful of steps, this lentil and rice tahdig proves that comfort food doesn’t need to be complicated. It’s nourishing, quick, and perfect for those nights when you need something easy that still feels homemade.
