Tender beef is simmered in a rich, creamy sauce with mushrooms, onions, garlic, and a touch of mustard for extra depth of flavor.


I love serving it over homemade mashed potatoes because they soak up every bit of the sauce. It is the kind of meal that feels perfect for a family dinner, a weekend meal at home, or anytime you’re craving something hearty and satisfying.

Beef Stroganoff Ingredients


  • 1 pound beef chuck, cut into bite-sized pieces

  • ½ yellow onion, diced

  • 2 tablespoons butter

  • 8 ounces mushrooms, sliced

  • 1 tablespoon avocado oil

  • 3 cloves garlic, minced

  • 1 tablespoon flour

  • ÂĽ cup white wine

  • 2 cups bone broth

  • ÂĽ cup cream

  • 1 tablespoon mustard

  • Salt, to taste

  • Black pepper, to taste


For the Mashed Potatoes

  • 4 Idaho potatoes

  • ½ cup cream

  • 2 knobs butter

  • Salt, to taste

  • Black pepper, to taste


Optional Garnish

  • Green onions, sliced


Beef Stroganoff Instructions


  1. Cook the Beef

Heat a large skillet over medium-high heat. Add the avocado oil, then add the beef chuck. Cook for about 7 minutes, flipping halfway through, until browned on all sides. Remove the beef from the pan and set aside.


  1. Sauté the Vegetables

In the same pan, add the butter, onions, mushrooms, and garlic. Cook until the onions are softened and the mushrooms have released their moisture, about 5 to 7 minutes.


  1. Build the Sauce

Return the beef to the pan. Sprinkle the flour over the mixture and stir to coat.

Pour in the white wine and bone broth, stirring to combine. Allow the mixture to simmer until the sauce begins to thicken and the beef becomes tender.


  1. Finish the Stroganoff

Remove the pan from the heat and stir in the cream and mustard. Season with salt and pepper to taste.


  1. Make the Mashed Potatoes

While the stroganoff cooks, place the potatoes in a large pot and cover with water. Bring to a boil and cook until fork-tender. Drain the potatoes and remove the skins. Mash with the cream, butter, salt, and pepper until smooth and creamy.



To Serve

Spoon the mashed potatoes onto a plate or into a bowl and top with the beef stroganoff. Garnish with sliced green onions and serve warm.
