Saffron Yogurt Pan-Fried Chicken

When chicken breast starts feeling boring… this is my go-to solution. Tender chicken marinated in creamy yogurt and fragrant saffron, cooked until golden and juicy.

The yogurt works double duty here, tenderizing the chicken while locking in moisture, and the saffron adds a subtle floral depth that makes the whole dish taste elevated. I used Chobani Whole Milk Greek Yogurt because it is thick, creamy, and perfect for both marinating and dipping. Everything was cooked in my Caraway pan for a low-tox, and non-stick finish that makes cleanup effortless.
You will also need saffron water for this recipe. I always keep a small jar stored and ready to go so it is on hand whenever I need it. I shared exactly how I make and store saffron water in a separate post, linked here, so you can prep it once and use it anytime for marinades, rice, or stews.
This is the kind of recipe you make once and then keep coming back to.
Saffron Yogurt Chicken Ingredients
1 lb chicken tenders
1 cup whole fat greek yogurt
2 tablespoon saffron water
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon turmeric
3 tablespoon avocado oil
Quick Yogurt Sauce Ingredients
1 cup whole-fat Greek yogurt
Handful of fresh dill, finely chopped
½ teaspoon salt
Step-by-Step Instructions
1. Prepare the Chicken-
Cut the chicken tenders into bite-sized pieces and set aside. Keeping the pieces uniform helps ensure even cooking.
2. Marinate the Chicken-
In a large mixing bowl, combine the Greek yogurt, bloomed saffron water, salt, black pepper, and paprika.
Add the chicken pieces and mix well by hand until evenly coated. For best flavor, allow the chicken to marinate for at least 30 minutes.
- If you are short on time, it can be cooked immediately.
3. Cook the Chicken-
Heat avocado oil in a skillet over medium heat.
Once the oil is hot, add the chicken in a single layer, making sure the pieces do not touch.
Cook for 10 to 12 minutes, turning occasionally, until the chicken is fully cooked and lightly golden on all sides.
Remove from heat and transfer to a paper towel-lined plate to drain excess oil.
4. Make the Yogurt Dill Sauce-
In a small bowl, stir together the Greek yogurt, freshly chopped dill, and salt until smooth. Chill slightly before serving to enhance the flavor.
Serving Suggestions
Serve the saffron yogurt marinated chicken warm with the dill yogurt sauce on the side. This dish pairs well with basmati rice, flatbread, or a fresh cucumber and herb salad.
Recipe Tips
Whole-fat Greek yogurt works best for both marinating and sauces.
Avoid overcrowding the pan to achieve a golden finish instead of steaming the chicken.
Final Thoughts
This saffron yogurt marinated chicken is proof that simple ingredients can create something truly special. The yogurt keeps the chicken tender and juicy, while the saffron adds a subtle warmth that elevates the entire dish. It’s an easy recipe that feels comforting yet refined, making it perfect for both busy weeknights and casual hosting.
Whether you serve it with rice, flatbread, or a fresh herb salad, this dish is one you’ll want to keep in your regular rotation. Once you start cooking with saffron yogurt marinades, it’s hard to go back.
