How to Make Fluffy Flax Pancakes

These fluffy pancakes are my kids most requested breakfast every weekend, and I look forward to making them together because they are simple, quick, and always turn out perfect.

There’s something so special about slow weekend mornings in the kitchen with my kids. This pancake recipe has become our little morning recipe tradition. It is easy enough for them to help with, and the addition of flaxseed makes it just a little more nourishing without changing the taste. Soft, fluffy, and lightly sweet, these pancakes always disappear fast.
They come together with pantry staples and cook beautifully on my Caraway ceramic griddle, which heats evenly and gives the pancakes the perfect golden finish.
Fluffy Pancake Ingredients
(makes 5-7 pancakes)
Dry Ingredients:
1 ½ cups plain flour
2 ½ tsp baking powder
½ tsp salt
1 Tbsp sugar
½ Tbsp flaxseed
Wet Ingredients:
1 ¼ cups milk
1 egg
3 Tbsp melted butter
2 tsp vanilla extract
Fluffy Flax Pancakes Instructions:
Combine dry ingredients: In a mixing bowl, whisk together flour, baking powder, salt, sugar, and flaxseed.
Mix wet ingredients: In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
Bring it together: Pour the wet ingredients into the dry and mix gently. I like using an electric hand mixer for a smooth batter, but you can whisk by hand too.
Heat the griddle: Set your griddle to medium heat and melt a little butter on the surface.
Cook the pancakes: Pour the batter onto the griddle in small circles. When bubbles start to form on the surface, flip the pancakes. Add blueberries to some pancakes if you like.
Serve: Remove from the heat, dust with powdered sugar, drizzle with maple syrup, and enjoy warm.
