Sweet and Savory Watermelon Salad with Feta, Mint, and Balsamic Glaze

When the weather heats up, I’m all about easy, refreshing recipes that feel special without the effort. This watermelon salad is the perfect balance of sweet and savory, tossed in spoonful of Kiani Extra Virgin Olive Oil and finished with a drizzle of balsamic glaze. It’s light, hydrating, and gorgeous enough to serve at your next brunch or dinner party. I served mine in a beautiful Mackenzie-Childs bowl, which added the perfect touch of charm to the table.

Ingredients

  • 12 oz pre-cut watermelon cubes

  • A handful of fresh mint leaves, chopped

  • Feta cheese, crumbled (to taste)

  • 1 tablespoon Kiani Extra Virgin Olive Oil

  • 1 tablespoon balsamic glaze


Serves: 2

Instructions


  1. In a large mixing bowl, add the fresh pre-cut watermelon cubes.

  2. Chop the mint leaves after washing them and add them to the bowl.

  3. Add a generous sprinkle of crumbled feta cheese.

  4. Pour a tablespoon of Kiani Extra Virgin Olive Oil and balsamic glaze over all the mix.

  5. Gently toss to combine and serve in your favorite bowl—I used my Mackenzie-Childs ceramic bowl.

This savory watermelon salad is everything I want in a summer dish: simple, vibrant, and full of flavor. It’s perfect for warm days when you want something quick that still feels elevated.
